
1 Pie Crust-I make a whole wheat pie crust, but you can make or buy
4 Eggs
2 Egg Whites
3/4 Cup Sharp Cheddar
1 Cup diced Mushrooms (Diced super fine)
1/2 Cup White Onion
1/2 Cup Almond Milk (you can use cows milk)
Salt & Pepper to taste
Italian Seasoning to taste
Whip the eggs, whites, cheddar, milk and seasonings.. Place the mushrooms and onions in the pie crust and pour the egg mixture over top. Bake on 350 for 35-45 minutes or until egg is set. Serve with brunch or with a Salad for dinner!
