Buttermilk Biscuits

These were so good!!

1 package active dry yeast
1 cup buttermilk
2 cups all-purpose flour
1/2 tsp salt
1/2 tsp baking soda
1 TBS sugar
1/4 cup shortening
1/4 cup butter (or 1/2 stick), melted

Dissolve the yeast in the buttermilk. Sift together the flour, salt, baking soda, and sugar. Cut in the shortening until the mixture resembles coarse bread crumbs.

Add the buttermilk all at once and stir until the dough pulls away from the sides of the bowl.

Turn out the dough onto a slightly floured counter and knead for 30 seconds. Roll out 1/2 to 1″ thick. Brush with melted butter and cut into rounds with your biscuit cutter. Place on a baking sheet and allow to rise for 1 hour or more in a warm spot.

Preheat oven to 450 degrees. Bake for 15 – 20 minutes, or until the biscuits are lightly browned.

Serve warm with plenty of butter and your favorite jams or preserves. This biscuit is nothing short of wonderful – it steals the show at any meal.
