Spinach Feta Tortellini Salad

I added my own twist to this very basic recipe I found online. Online it was just (Spinach, Tortellini. Olive Oil, and Feta Cheese. This is a very healthy and fast Spring time meal.

~INGREDIENTS~

- 1 package 9 oz refrigerated Spinach or Four Cheese Tortellini
- Package of Feta Cheese
- 5 Tbs Olive Oil
- 2 Tbs Balsamic Vinegar
- 2 Tbs Cider Vinegar(optional, you can use more Balsamic if you want)
- Half of a medium Red Onion
- 1 tsp dry or fresh Basil
- salt/pepper to your satisfaction
- 1 Roma Tomato
- 2 cloves garlic
- 1 package baby spinach

~DIRECTIONS~

1. Cook Tortellini as directed on package and drain. While that is happening work on number 2.
2. Then chop/dice onion, garlic, and tomato. Then put Olive Oil, Balsamic vinegar, Cider Vinegar, garlic, and red online in skillet and saute on med heat for about 10 mins. Add salt, pepper, and basil while cooking. Also add tomato last 2 -3 minutes and saute with mixture.
3. Put fresh baby spinach on plate then add the tortellini's. On top of the tortellini's add the onion mixture finish with Feta cheese and pepper. Enjoy!

Everything takes about 15- 20 minutes at the most.

Makes about 2 servings if you want a whole plate full.
