~Apple-Cranberry Salmon Salad

1/2 Cup teriyaki sauce
4 4-ounces salmon fillets
1/4 Cup of fresh lemon juice
2 Tbsp honey
1/4 Tsp sea salt
1 Pinch freshly ground black pepper
2 Large gala apples
1/2 Cup chopped fresh or thawed frozen cranberries
2 Tbsp chopped fresh tarragon


1. Pour teriyaki sauce over the salmon in a shallow glass baking dish. Cover with plastic wrap and place in the refrigerator for 30 minutes to 2 hours.

2. Mix lemon juice, honey salt, and pepper in a large bowl.

3. Core and thinly slice the apples using a mandoline or a sharp knife.

4. Add the sliced apples to the lemon-honey mixture and toss together to coat. Add the cranberries and tarragon and mix well.

5. Preheat your grill or broiler.

6. Cook the Salmon fillets for 3 to 5 minutes on each side, or until opaque at the center. Do not overcook.

7. Break apart the cooked salmon into bite-size pieces.

8. Add the chunks of meat to the apple-cranberry salad, toss well and enjoy!

Ray seen this in his mensfitness magazine, and thought that we should try it, so we will see how it comes out on monday!
