Smothered Chicken







1 Whole Chicken, giblets removed

Rub chicken with olive oil, sprinkle a little lemon juice over it, sprinkle 1 tablespoon Paprika, Salt & Pepper. Chop a white onion in half, and stuff the cavity. Take one whole head of garlic (peeled) and place around the chicken. Chop a sprig of fresh rosemary, and put on the chicken.

Bake at 375 (I used my clay deep covered baker) for 40 minutes with lid on. Bake an additional 20-30 with lid off. (You might need to adjust timing depending on your oven!)
