Cook Time: 20-25 minutes
Ingredients:
- 1 medium salmon filet (serves 2) or a large salmon filet (serves 3-4)
- 3-5 cloves of garlic, 5 if you LOVE garlic
- 1/4 cup of cilantro
- 1/2 tsp. ground sea salt
- 1/2 tsp. ground black pepper
- 1/2 tsp. oregano
- 1/4 cup lime (or lemon) juice
- 1-2 tbspn. of 100% organic EVOO
- Water
1) Rinse and prepare salmon with seasonings of your choice (I use ground salt and ground black pepper) and refrigerate while prepping sauce.
2) Chop garlic and place into a bowl, along with your EVOO, lime (or lemon) juice and add in 1/2 tsp. ground sea salt and pepper. Mix together with a spoon and press garlic against bowl to bring out garlic flavor. Next, add your cilantro and oregano. After you've mixed all ingredients, add water until you get the consistency you desire.
3) Preheat your grill to a medium-high heat, place a piece of foil down on your grill or you can brush your grill with EVOO so the salmon won't stick.
4) Cook salmon for about 20-25 minutes or, for a more medium to medium-rare salmon, cook for 15 minutes.
5) As you cook your salmon, pour as much or as little of the cilantro sauce as you'd like over the salmon. I constantly pour over with a spoon the entire time I'm grilling my salmon. I usually have quite a bit of sauce left over and I save it to add more while I'm eating.
I made this salmon with short-grain brown rice and green beans!
