1 Can of enchilada verde sauce - you can choose from spicy to medium or non-spicey
8 Corn tortillas or however many you want
1/3 Cup crumbled queso fresco or feta cheese
1 Cup of greek yogurt or sour cream
1/2 head iceberg lettuce, shredded (optional)
1. To build the enchiladas, you will need to create an assembly line consisting of a plate you'll microwave tortillas on, a saute pan used for heating the enchilada verde sauce, a bowl containing the shredded chicken, and the plate you will be serving on.
2. To get started, microwave your tortilla between two moist paper towels for about 20-30 seconds. Remove the paper towels and coat the tortilla with the enchilada verde sauce. Lay the enchilada in the serving plate and add about 1/4 of shredded chicken in the center and roll. Repeat according to how every many you want. Then pour a little more of the enchilada verde sauce on top and add remaining ingredients and enjoy!
This is so fast, easy and very delicious!!! You can also get the red sauce if you like the enchiladas rojas better. I like them both, but I think I like the green a little better. Also.. If you perfer no meat... try it with homemade mashed potatoes instead... they taste so good! Just put the potatoes in boiling water and let them sit till there nice and soft, then just peel off the skin and mash them and add them to the enchilada.

Yummy! I'm going to give this a try soon. I always mess up enchiladas but this seems very simple to follow. For some reason my tortillas always crack and break.
