~Tropical Chicken Salad

This is such a good summer salad! It is so refreshing!!

2 Boneless, skiness chicken breast halves
2 Teaspoons extra-virgin oil
1/3 Cup of fat-free plain yogurt
1 Tablespoon orange Juice
4 Cups of Romaine lettuce
1 Cup refrigerated mango chuncks
8 whole strawberries (optional)
1 Avacado sliced (optional)



1. Set up grill or stove top to cook chicken. Brush side of chicken halves with olive oil and seasoning-optional. Cook until chicken is no longer pink.

2. For dressing, drain pineapple, reservings 1/3 cup juice. Measure 1 cup of pineapple chunks; set aside. Refrigerate remaining juice and pineapple for another use. In a small bowl, whisk together the 1/2 cup reserved pineapple juice, yogurt, and organe juice. set aside

3. On a large platter, arrange romaine lettuce, chicken, pineapple chunks, mango chunks, strawberries and avocado-optional- slices. Serve with dressing, and enjoy!
