Sun Dried Tomato & Artichoke Chicken

This was really good! And seriously Easy. I know I probably say that a lot, but its only because I'm all about easy! I tried to make this similar to a dish I like at Strings.

Garrett said this is the best chicken I have ever made. However, he always says that. So I'm not sure if he's really all that credible in the food rating department. haha!







Ingredients

2 Tablespoons Mayonnaise
1 Teaspoon Italian Seasoning
dash of Lemon Juice
Salt & Pepper to taste
2 Tablespoons Chopped Sun Dried Tomato
1/2 chopped white onion
6 chopped artichoke hearts


Mix all ingredients together. Coat tops of the chicken breast with the mixture. Bake at 350 for 35 minutes or until chicken is done.

I served it with Green beans, but this would be great with a Fettuccine Alfredo and a Salad.
