This recipe was really good. I was going to make a corn soup, and then went nuts with it and turned into chowder! It is definitely one I will be making again, SOON! And it was so quick and easy.
1 bag frozen corn
1 can Hominy
1 can Diced Green Chiles
2 cans Evaporated milk -You can do low fat if you are watching your weight
2 stalks green onion
1 teaspoon garlic
1 teaspoon Cayenne Pepper (Or less if you don't like spicy)
Salt & Pepper to taste
Grated Sharp cheddar for topping
1 teaspoon butter or olive oil
Pour half the bag of frozen corn into the blender. Add 1 can evaporated milk. Blend until smooth.
In a large soup pot, Saute the onions and garlic in a little bit of butter or olive oil. Add blended corn mixture and remaining ingredients to pot and cook on medium heat for about 20 minutes.
Top with cheese and enjoy!
