Lemon Kisses

4 Large egg whites
1 Teaspoon grated lemon
1/8 Teaspoon salt
1/8 Teaspoon lemon juice
1 Cup of sugar
1Teaspoon vanilla extract
1/2 Teaspoon lemon extract
3 drops of yellow food coloring

1. Let egg whites stand at room temperature for 30 minutes. Preheat oven to 250 degress F. Line 2 baking sheets with parchment paper.

2. In a medium mixing bowl, combine egg whites, lemon zest, salt, and lemon juice. Beat on low speed of an electric mixer about 30 seconds or until foamy. Beat on high speed for about 1 minute or until frothy. Gradually add sugar, beating until combined. Scrape down side of bowl as needed. Add vanilla extract, lemon extract, and food coloring. Beat on medium speed until stiff peaks form. Mixture will be glossy.

3. Place mixture in pastry bag fitted with 1/2-inch star tip. Pipe kisses into prepared baking sheets, spacing them 1/12 inches apart. Place both baking sheets in preheated oven.

4. Bake for 16 to 18 minutes. Rotate sheets front to back and top to bottom. Bake 16 to 18 minutes more. Turn off oven and let kisses stand in oven for 30 minutes.

5. Remove baking sheets from oven. Transfer parchment paper with kisses from baking sheet to a flat surface. Cool completly. Gently peel the kisses from parchment paper. -By Sandra Lee

~Ok, so I completely failed on making this dessert! I dont know if its because I dont have an electric mixer to really help mix it or because I didnt let the egg whites stand for 30 minutes. I am not sure, all I know is that they came out more like pancake kisses hahahaha!! I thought it would be a fast easy dessert, but apparently it wasnt for me.

  1. mmmm! Ibet they were good though! Your so funny with the "pancakes" comment. I never have good luck when I have to whip eggs!
