Hey ladies!
Here is an easy Chicken Tortilla recipe that I like to make when I'm in a pinch. The best part is, its just as good as making it the "Long way". I got it from some crock pot cook book years ago and have modified it a lot.
32 oz Chicken Broth
2 Cups water
2 Chicken breast shredded (cooked)
1 Bag frozen corn
2 zuchinni, sliced
Red Bell Pepper, & Green Diced
1 Onion, chopped
1 Lime, squeezed
1 oz tequila (The alcohol cooks out, but gives good flavor). I never have on hand so I often omit. If I'm cooking for others, I will make the trip to get it.
1 Can diced "Mexican style" tomatoes
1 TBSP Chili Powder
1 TBSP Chopped Garlic
Dash of Paprika
Dash of Cayenne Pepper (or if you are like me, several dashes)
Sprinkle of Garlic powder
Salt to taste
Pepper to taste
"DUMP" everything into your crock pot, set to low setting and cook for 2-3 hours. It is seriously so easy and so delicious!
Pour soup over Cilantro, Chips & Grated cheese.
You can also save in the freezer for later!

Chicken tortilla soup sounds so good! Believe it or not I dont own a crock pot! Goodness, I need to go buy one!
ReplyDeleteOlga, you totally need to get one! You can make this soup the same way with a pan. But with a crock pot, you can leave and run errands, etc. while its cooking.
